Does anyone know of a good IC that can monitors a battery and give me things likes, current consumed or current remaining and uses I2C?

I have used the MAX666 (suggested a few months ago in this board) to monitor when a battery weakened down to a certain voltage (this voltage is chosen by a voltage divider). However, i am not aware of a battery monitor using i2c that can also determine how much current has been consumed.

There are a bunch of chips out there like that. Go to TI or Maxim/Dallas website and search for "gas guage" IC's. Also look for I2C or SMBus -- SMBus is basically I2C hardware interface with it's own command set. Most "smart" battery packs use a SMBus compliant gas guage chip.
