Need to understand how data is stored in a hex file

We have an old prototype (10+ years) that is throwing an error code. The developer is long gone and all I have is the hex file.
I'm not looking for an explanation of the intel hex format. I understand that. I'm trying to understand how constant data is represented. As a test I've looked at one of my hex files. The code writes a P to an LCD but I can't find x50 in the hex file. Any ideas where I can find an explanation?

For the Hex file format, read the Wikipedia and Keil articles:
